Amy's Nutrition Picks: Polenta

A little-known comfort food.

Polenta, also known as corn grits or coarse cornmeal, is a great choice when you are looking for an easy, but nourishing, comfort food. Polenta is considered a whole grain and is very inexpensive. It is available in the bulk section at Smith's on 12th and Harrison or Good Earth on Riverdale Road. This recipe makes 3 servings.

  • 4 cups water
  • Dash of salt
  • 1 cup polenta
  • 2 Tbs butter or olive oil (optional)

Bring 3 cups of water and salt to a boil (reserve 1 cup water). Turn heat down to low and add polenta in a steady stream, stirring with a whisk or fork as you add it to the water. The polenta will become very thick, so it must be stirred to prevent burning. Stir every few minutes, adding 1/4 cup water, to prevent burning. Cook for approximately 20 minutes total. On your final stir, add butter or olive oil, to give it a creamier consistency. Serve immediately in soup bowls with a topping from below.

Polenta tastes great with a variety of toppings, from simple to elegant. Here are a few favorites:

  1. With honey and butter (kids loves this!)
  2. With black beans, sour cream, and fresh salsa. To dress it up a little more add fresh cilantro and sauteed red peppers.
  3. With pasta sauce and shredded cheese
