Amy's Nutrition Picks: Amy's Trail Cookies

These simple, hearty cookies are perfect for bribing children on trails or as an afternoon "pick-me up".

Combine dry ingredients:

  • 2 cups whole-wheat pastry flour or spelt flour
  • 3/4 tsp. baking powder
  • 3/4 tsp. salt
  • 1/2 cup oats, cooked or raw

Combine wet ingredients:

  • Cream together 10 Tbs. butter (replace with peanut butter, as desired) and 1 1/4 cup sucanat or unrefined cane sugar
  • Add 2 eggs and 1 tsp. vanilla

Combine all ingredients. Add chocolate chips or any "healthy additions" listed on Healthy Baking Substitutions. Bake at 350° for 8-10 minutes.
